Ingredients
- 2 x 145g tins of tuna in spring water, well drained
- 2 tbsp TOMÁTÌ ỌBÀ
- 1 tbsp good-quality mayonnaise
- ½ small red onion, very finely diced
- 1 tsp fresh lemon juice
- A pinch of smoked paprika
- Sea salt and freshly ground black pepper
- 2 plain or sesame bagels, halved and toasted
Method
- Drain the tuna thoroughly and flake it into a bowl, breaking it into small, even pieces — no large chunks.
- Add the TOMÁTÌ ỌBÀ, mayonnaise, red onion, lemon juice, and smoked paprika. Mix well until everything is thoroughly combined. Taste and season generously with salt and pepper.
- Toast the bagels until golden and just crisp at the cut edges.
- Pile the tuna mixture generously onto the bottom half of each bagel. Crown with the top half and serve immediately while the bagel is still warm.
Serving Suggestion
A handful of peppery rocket dressed with lemon and olive oil cuts through the richness beautifully. For a more substantial meal, add a soft-boiled egg with a jammy yolk alongside.
